The Farm:
We have been purchasing coffee directly from Mauricio Salaverria and his team in Western El Salvador since 2011, making this our 15th consecutive harvest together! Mauricio operates three distinct Fincas, with Finca Himalaya being his most prized location.
In February 2025, our team traveled to El Salvador to visit Mauricio and his team and see the exciting new projects they’ve been working on since our last visit. Mauricio is always looking to increase quality via investments in varieties, processing, and most recently, an expansion of Finca Himalaya. On this high-elevation plot on the very top of the mountain, he plans to plant varieties like Chiroso, Pink Bourbon, and Typica Mejorado. We can’t wait to share these coffees with you in a few years!
Processing:
Originating from a cross between Pacas and Maragogype, the Pacamara variety is grown primarily in El Salvador, where it frequently dominates Cup of Excellence competitions for its remarkably high cup quality.
After careful picking and sorting to ensure only red, ripe cherries are processed, this naturally-processed coffee was slowly and evenly dried on raised beds, leading to its bright and distinct fruit flavors with almost no “ferment” flavor.
